Pickles are controlled fermentation products with the use of natural and artificial acids, salt and sugars. As and when required, spices are roasted for aroma and pickles are also pasteurized for controlling the microbial loads.

Micro biologically Pickles and Chutneys are relatively safe products, as pH of the final products are less than 4.5 and water activity (aw) 0.85.
